Decisions, decisions, so many delicious decisions...

Back in December I said  Mrs. Dash Products were easy, economical and delicious. 

But I want to reiterate my point of view about Mrs. Dash with this chicken 'cause is there anything that screams, Mom loves you! more then a roasted chicken....  Plus look at it...Yum, right?

The other day my father was coming for dinner and we would be eating somewhere between 4 and 7.  Maybe my sister, maybe not.  I needed a meal that could wait without failing.  I needed a meal that would turn out perfect but was easy.  It was too late to plan and fuss.  It couldn't be fiddly on time or prep.  And standing over the stove cooking was out.  I settled on a version of Sticky Chicken  I've been using lately because Mrs. Dash makes it so easy to really, really (No, really) alter the recipe. 

It was morning and being woefully unprepared I ran out in my pajamas and bought a whole roasting chicken (find one under five pounds or cook two).

The rest is easier because I didn't have to leave my house  and Yay! for not having to leave my house!

Put the chicken into a container large enough to marinate.

Pick the Mrs. Dash flavor that appeals to you that day, (there are fourteen of them) and if you're indecisive - Worry not.  They all work.  Add about two tablespoons to the chicken.

 Mrs. Dash isn't just for people watching their sodium and if you aren't add about 2 teaspoons of salt.  Adjust this down or up.

I love adding citrus zest at this point and added the zest of an orange to the Italian Medley Spice Blend. 

Rub the spices and zest all over and inside the chicken.  Marinate a few hours or overnight, I had a few hours.

When you're ready preheat the oven to 250 degrees Fahrenheit and stuff the chicken with something - depending on what you're spice is.  I used oranges this time but it could be onions, onions and garlic, limes and garlic - etc.  Roast chicken breast side down for four hours.  Then roast one more hour  breast side up.  The last hour I rubbed the chicken with butter and basted it a few times but the butter massage is optional.

So. Good. 

Next time I'm thinking Fiesta Lime Spice Blend with Lime Zest (Stuffed with limes and garlic) or Garlic and Herb Spice Blend with Lemon Zest (Stuffed with Lemons, Garlic, and Scallions)...  Decisions, decisions...

So many delicious decisions...

If I ate meat, I would devoure this!!!! Yum!! :)
