Could you help me with a recipe for tonight, please? - * Updated* Recipe is for tomorrow because of the flood...

Did you ever look in the freezer to find pretty much one dinnerish item?

 I mean besides things like frozen fried chicken, ice cream  and tortellini.  Those are for my kid who's not dieting.

I looked in the freezer and all that was in there was this...

Actually mine was the even skinnier version.  4% fat.  I have it thawing now but I don't know what to do with it and I need a recipe.   Can you guys help me with a recipe for tonight?

I know it's short notice.  

I looked through my Weight Watchers cookbook and they had an interesting meatloaf with sauteed veggies and oatmeal which sounded good (oatmeal is a very good filler for meatloaf, promise) but it had a butt load of tomato sauce as the liquid.  Well, sauce and paste and basting with it...and poured over it and...  And it was starting to sound like a giant meatball/loaf.

And really, if the recipe's not meatloaf that's okay.   I have a pound of meat so it would have to be for that much.  And I'd like it to be with pantry type items so I don't have to run out and buy, I dunno... Hearts of palm or something.

So...

Can you guys comment a recipe for a pound of hamburger?  

I am trying to keep it light  so Cream of Hamburger Soup Parmigiana is out, but I'm not unreasonable...  if it's got a piece of bacon.... something that's evens out over a whole recipe, that's fine.  But don't make it crazy fatty, no matter how yummy it may be!


* So I'm washing dishes and that will teach me to clean, right?  I open the cabinet under the sink - it's where the garbage is - and a wave of water pours out and the first thing I think is not, I have to get all that stuff out!  It's wait, where in the world is my camera so I can get a picture for my blog...

blink...blink...blink...

And then I thought, whoa! You are way all too into this blog thing and just work on the flood, genius. 

And so I did.  As a result there will be no cooking because stuff from under there is all over the counters which is frankly, ew.  My OCD is just banging.  

Be that as it may, it's ham sandwiches for dinner and I'm saving the hamburger for tomorrow so keep those recipes coming please.

This isn't so much of a recipe as it is an idea. Today is Cinco de Mayo, so maybe some tacos or burritos with lo fat cheese & lots of veggies. Since you have the lean beef...almost like a salad in a shell. :D

I call this "Im kinda Italian Stuffed Peppers.. " Put browned chop meat, 1 pkg of cooked minute rice and a jar of spaghetti sauce with a 1/2 cup bread crumbs in one pot.. stir. Then I take bell peppers.. clean and shove in microwave in a bowl of water so they cook.. or braise them on stove top... Stuff peppers and serve.. My kids just eat the stuffing...LOL

How about chili? Or hamburg soup. Brown the bround beef with an onion, drain, put it in a soup pot with broth or water (whatever you have). Add some a can of tomatoes (or jar of salsa - trust me on this one), cut up potatoes, carrots, celery, frozen veggies - again - whatever you have on hand, you could toss in some elbows or rice, season to taste (I use a bay leaf, garlic, etc...) Cook until done. Easy.

I am in the michele category....I think cinco de mayo themed is in order.....how about a taco salad, our family makes one with a can of kidney beans, drained, browned ground beef or turkey seasoned with cumin and garlic while cooking, crushed up corn tortilla chips, sliced tomatoes, green onions, avocado, black olives and grated cheese all served on a head of finely shredded lettuce, sometimes I use cabbage as well and then a thousand island dressing.....either bottled or home made as fat free as you like it.....we mix it up and there is something soooo yummy with the kidney beans, thousand island, meat and lettuce.....you can add corn, zucchini, cucumber whatever you have around and like!

Maybe you could try Shepperd's Pie? Make some mashed potatoes and brown your beef. Grab a quart-sized baking dish. Grab some veggies, canned or fresh, and mix them with your ground beef in the baking dish. Put your mashed potatoes on top, then throw the whole thing you the oven for about 45 minutes! If you can get away with it, ahead and put some cheese on top of it, too!

Thank god I have leftovers in my fridge....I'm too tired to cook (from the new job....) You could make spaghetti sauce after all you can eat a cup of pasta for 3 points (did that change?) or burgers, you eat yours bunless or with a WW one. Man I need to put my feet up,lol

you can do Taco Rice! it's basically taco stuff on rice instead of in a tortilla. OR Taco Soup, brown meat with a packet of taco seasoning and a packet of ranch dip mix (sounds odd but go with it) and a small onion. Then add in (with all their juices, cause it's soup after all) 1 can Rotell, 2 cans of corn, 1 can of black beans, 1 can of kidney or pinto beans, 1 can of stewed tomatoes (I usually get the with green chillies kind or with garlic kind) 1 can black olives. Heat and serve with Tortilla chips.
